mirume is a Japanese tea shop and cafe in the Shikemichi historic district of Nagoya.
The shop looks casual. The tea is serious.
We don't source by origin. We source by standard.
The standard has a name: the M Standard. Every tea here was tasted and scored against it by professionals who grew up in tea, before anything reached the shelf. The criteria are public.
What you can experience here
The first floor is the shop. The second floor is the cafe.
In the cafe, order any tea you like. We will bring two more teas alongside it, free of charge, chosen by our staff so you can compare. Tasting side by side is the fastest way to understand Japanese tea one level deeper.
In the shop, we pour two or more tastings as standard, so you can compare before you choose. Tell us what you usually drink, and we will choose what to pour. Many visitors take tea home as gifts.
You can also brew tea yourself with a kyusu, the Japanese teapot. Our staff will guide you through it.
The teas
We roast five different hojicha, each with a different method: sand-roasted stem, white stem, hand-roasted over charcoal, semi-oxidized, and first-flush. We also carry multiple green teas. The point is not variety for its own sake. It is width, so you can find where your own taste sits.
Our kabusecha has been presented to the Imperial Family and was served at the Ise-Shima Summit. A rare leaf, shaded and picked young, with a yield about half that of the finest gyokuro.
Our sand-roasted stem hojicha was tested by an independent certified laboratory in Fukuoka, Japan (株式会社日本食品機能分析研究所, report No. 2507636-001, issued November 6, 2025). Caffeine: not detected, at a detection limit of 0.01 g per 100 g (HPLC method). No decaffeination process. The tea is simply made this way.
We carry few single-cultivar teas. We believe tea should be read by how it is made and who makes it, not by cultivar name. The reasoning is written on Ask Japanese Tea.
We never use added flavoring. In any tea, ever.
The people
Mirume is the word tea farmers use for the young bud, the highest-quality part of the plant. We opened this shop to bring that quality to people who are new to tea.
The name fits where we come from: three generations of tea farming in Matsusaka, Mie.
The founder's father is a recipient of the Emperor's Cup, Japan's most prestigious agricultural award, first presented in 1962. One of only 18 tea producers ever to receive it, as of June 2026. He handled everything himself, from cultivation to roasting and blending. His palate is still the anchor of our quality.
Three of our staff are certified Japanese Tea Instructors. The certification, issued by the Nihoncha Instructor Association, requires passing both a written examination covering cultivation, processing, tea chemistry and quality assessment, and a practical examination in tea identification and brewing instruction.
The founder was selected as one of the 30 Innovators in Japanese Tea in 2024.
Several thousand visitors from overseas come to the shop each year. More than ten thousand over the past five years.
